Twenty-one carefully chosen casks were selected for this exclusive twenty-one-year-old release, inspired by the unfiltered, straight-from-the-cask tastings enjoyed by visitors in our distillery’s iconic coastal warehouses. This single malt highlights the expertise of Master Blender, Julieann Fernandez, who meticulously balanced the influence of the casks with the integrity of the original spirit. The Pedro Ximénez casks lend rich, sweet notes without overshadowing the whisky’s character, creating a harmonious blend of spirit and wood.

Bottled at a robust Cask Strength ABV of 53.6% and fully matured on Islay, this whisky spent the majority of its aging in Ex-Oloroso Sherry casks before undergoing a final twenty-one-month finish in the finest Pedro Ximénez casks.

Tasting Notes

Nose: Sweet nose with notes of dried fruit, nutmeg spice, honey, caramelised walnuts and a gentle touch of oak.

Palate: Initial spicy notes of cinnamon and clove fade to reveal grape syrup which coats the palate, with raisins, figs, candied cherries and a hint of liquorice.

Finish: Lingering spicy finish of toasted coffee and cocoa.

Bunnahabhain Distillery.

Found at the very end of an Islay (Eye-lah) single track road, tucked on the shore of the Sound of Islay. Bunnahabhain was founded in 1881, armed with a small village a pier and whisky making know how. The distillery relied on sea trade supplied received by sea and full of casks of whisky to the mainland.
Sadly in 1930 the distillery closed due to an economic downturn after the Great War but opened again 7 years later. Over the years Islay hasn’t changed much – the scenery is stunning. In 1960 Bunnahabhain benefitted from new roads built making it easier to travel around the Island. Over the years demand soared, new stills were installed in 1963 and production increased. 1993 saw the last boat docking at the distillery giving way to exclusive road use. Investment increased, merging of ownership, packaging was modernised and a visitor centre added by 2021. Staff make you feel welcome, the whisky tours are popular creating a great atmosphere (Bunnahabhain, 2024).
